Apple Short
“Keep On Cookin’ ”

Ingredients

  • 3 tablespoons white granulated sugar
  • 3 tablespoons cold water
  • 4-5 small apples pared, cored, sliced
  • 1 cup brown sugar
  • 1/2 cup flour
  • 1/2 cup butter

 

Directions

  • Step 1 Arrange sliced apples in 6-7 inch casserole
  • Step 2 Sprinkle white sugar, add cold water on apples
  • Step 3 Cut up butter in brown sugar, flour mixture
  • Step 4 Cover apples with this mixture and pat down hard.

Bake at 350 degrees for 45 minutes. To be properly cooked the juice of the apple should ooze up through the mixture making a taffied-like substance. Serve with whipped cream if desired.

  • 30 Arrowroot Biscuits
  • 2 eggs Beaten
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 4 tbsp. cocoa
  • 1 tsp. vanilla
  • 1 tsp. salt

 

Directions

  • Step 1 Combine 2 eggs, brown sugar, butter and cocoa and cook until thick in saucepan.
  • Step 2 Remove from heat and added Arrowroots broken in bits (not too small) and ½ cup walnuts.
  • Step 3 Pack down in 8 x 10 inch pan and put in refrigerator.
  • Step 4 Ice with chocolate butter icing and cut into squares.

Rhubarb Relish from “The Taste of the Macpherson House”

A sweet tart relish goes well with Pork or roasted meats

Ingredients

Rhubarb

2 cups Vinegar
8 cups rhubarb, cubed
8 cups brown sugar
4 cups onions, diced
1 tsp. cinnamon, ground cloves, allspice
1/2 tsp. red peppers flakes
1/2 tsp. salt

Step 1 In a large pot, bring vinegar to a boil.
Step 2 Add rhubarb, onions and sugar. Simmer covered, for 10 minutes.
Step 3 Add cloves, cinnamon, allspice, red pepper, and salt. Simmer another 10  minutes.
Step 4 Pour into sterilized jars and seal.

 

 

 

 

 

 


Berry Cake – “Favourite Recipes 1959”

Basket of berries

Ingredients
1 cups granulated sugar
2 eggs
2 Tbsp. sour milk (1 cup milk add 1Tbsp of lemon juice or vinegar as an alternative.  Let sit 5 minutes.) Remaining sour milk can be use in quickbread recipes, spice cakes, soda breads and to marinate Chicken.
1/2 cup butter
1 cup Berries (strawberry, raspberry, blackberry)
2 cup flour
1 tsp. soda

 

Directions

Step 1 Cream butter and sugar together, add eggs and beat well.

Step 3 Fold in berries.
Step 4 Bake at 375 degrees 30-35 minutes or until done.
